I love grilled chicken, there are so many different ways to prepare it, and it all tastes good.
This is one of the simplest, easiest preps, but the flavor yield is so much more than the few ingredients.
Serves 4
Ingredients
2 pounds boneless skinless chicken thigh
2 tablespoons sesame oil
2 tablespoons chili pepper flavored vinegar
coarse ground black pepper
salt
Optional Gochujang Dipping Sauce
2 tablespoons gochujang
3 tablespoons water
1 teaspoon coarse ground gochugaru* (hot)
1/2 teaspoon soy sauce
1 tablespoon bokbunjaju (Korean Black Raspberry Wine)
1 clove garlic, fine minced
1 small green onion, fine chopped
*dried and ground Korean red chili peppers. Gochugaru comes in fine and coarse grinds, and ranges from mild to hot.
Directions
Heat grill, grill plate, oiled skillet, or pre-heat air fryer* to 390 F.
Place the sesame oil and vinegar in separate small dishes.
Cut shallow slits in the smooth side of the chicken thighs.
Brush the chicken thighs first with the flavored vinegar, then the sesame oil.
Lightly sprinkle with salt and pepper.
Put the chicken on or in your heated cooker smooth side down.
Cook until a light char starts forming, then turn and repeat. When chicken reaches 165 F remove from heat and let rest for a couple of minutes.
Final
Serve hot with rice or your favorite side(s).
