Mu - Korean Radish

Wrap or Pickle

Korean radish is used in soups, stir fry, braises salads, and kimchi. There are also some simple and delicious ways to use them.

1  smaller Korean radish  (about 1 pound)
½ cup white vinegar
½ cup water
2 tablespoons sugar
2 teaspoons salt


Optional:
honey


Wash the radish in cold water, removing rootlets. Peel if needed.
Thin slice the radish (about ⅛ inch thick) *
Place the radish slices in a mixing bowl and sprinkle salt on as many slices as possible.
Let stand for 15 minutes, then rinse in cold water.
Mix the vinegar, water, and sugar together, stirring until the sugar dissolves.
Pour the vinegar mix over the radish slices and stir.
Refrigerate for 1 hour then serve as a chilled snack, or as a wrap for meat or fish.
If serving as a snack,  a drizzle of honey may be added.

* a mandoline, food slicer, or food processor with a slicing feature will make this easier 

Pickled radish

Cold, a Little Sweet & Sour 

1 large Korean Radish (about 2 pounds)
1¾ cup rice wine vinegar or white vinegar
1 cup water
2 tablespoons sugar
2 tablespoons coarse or flaked sea salt or 2 teaspoons table salt
Optional
2 cloves garlic, peeled
1 small onion
1 small carrot


Wash the radish in cold water and remove all rootlets. Peel if needed.
Slice the radish cross wise about ½ inch thick. Cut each slice into strips about the same width as they are thick.
Cut the strips into cubes.
Place the cubes into a mixing bowl and add salt, tossing to cover all cubes. 
Let stand for fifteen minutes, then rinse in cold water.
(Optional Steps)
Mix the vinegar, water, and sugar together, stirring until sugar is dissolved.
Pour the vinegar mix over the radish.
Refrigerate for at least 2 hours until well chilled.
Serve cold.

OPTIONAL
Thin slice the garlic from top to bottom.
Peel and wash the onion, cut in half, then medium slice each half.
Peel the carrot, then either shred it, or cut lengthwise and thin slice each half, then cut into "matchsticks".
Put the onion, garlic, and carrot into the bowl with the radish, then toss until well mixed.
